Cortlands are fine, but they are not even the best from the finger lakes region. The best are genetically made at Cornell University's apple orchard and I think they are simply called U481 (I could be off on the number). They are usually only available for a week or 2 right at the orchard, so they are never available to stores.

Red Delicious and Honeycrisp, mostly. I've never been one for the more tart varieties.

As a sidenote, recently I had for the first time an 'apple pear' (which isn't truly an apple, but an Asian pear). Very juicy and crunchy.
