Restaurant drops plan to cook with breast milk

Talk about a Swiss miss.

A gourmet chef's plans to whip up a number of delicacies using human breast milk have dried up.

Hans Lochen, proprietor of the Storchen restaurant in Iberg, Switzerland, advertised in German newspapers seeking women willing to sell him their milk. But Swiss authorities stepped in and threatened lawsuits against the chef and any potential donor willing to pump for cash.

Before he cooked up his daring culinary scheme, Locher had been doing a little private recipe testing, he claims. Preparing such entrees as breast milk lamb curry and antelope steak with chanterelle sauce spiked with cognac and breast milk had drawn rave reviews: his friends loved the creamy entrees, Locher says.

"The idea first came to me when I noticed that there were many young mothers in our village, some of them single," he said. "I thought to myself: why not make use of their potential? I served the meals to my friends without telling them about the new ingredient and the feedback was excellent."

So excellent, in fact, that Locher figured he needed more of his "secret ingredient" before he could cook up enough of the meals to serve at his restaurant, which is near the resort of Winterthur. After posting ads in some German papers offering about 10 pounds per liter of milk, he was pleased with the positive response.

Not so pleased, though, were Zurich’s food regulatory body and the Association of Swiss Milk Producers.

Swiss officials were taken aback by an apparent loophole in the regulations which did not seem to address the issue of cooking with breast milk. The authorities ruled that Locher would not be able to store the human milk properly nor guarantee that it was fresh and safe for consumption.

They threatened lawsuits if he proceeds with the plans of introducing the novel recipes to the public. Locher nursed his bruised ego by making it known that he didn’t understand what all the fuss was bout.

"I don’t understand all the controversy," he said. "The mother’s milk is the most natural thing in the world - how can anyone be against it?"

Don’t look for breast milk specialties to start showing up on this side of the pond.

"It could never happen in this country - the Department of Agriculture would not allow it," says John Kinsella, president of the American Culinary Federation, the largest organization of chefs in America, representing 23,000 chefs. "I think this is all about a chef trying to promote himself."

For real though, with any other living organism they have stamps and grades and clearances milk production...although it's a bit of a far out concept for me, if I look at it objectively, all I'm thinking is "did you check to make sure this is not heroin junkie milk before you brought it in for the chantrelle sauce "
