RAW Cashew ICE CREAM Recipe

I just made a really taste RAW Cashew ICE CREAM Recipe!! drool






1 Cup of water (or 1 cup coconut water)
3/4 cup of cashews (raw preferably)
3/4 cup of pitted mejol dates
pinch of sea salt
teaspoon vanilla
2 tablespoons of cocoa powder (raw preferably)


Put in a blender and blend until thick and smooth.
Pour into your ice cream maker and make according to instructions OR place in container and freeze for 1 hour.

I use coconut milk when making curries, but that is sooooo full of fat. This would be too, considering it's all nuts, though, so I suppose it's no difference.

In either case, I'm never going raw.

Ummm...I hate to get all technical...but it isn't really ice cream if there's no...ya know...cream.

This is a sorbet.

that's an interesting point.

are there any raw sorbet recipes that involve fruit? fruit sorbet or ice cream just sounds yummier than nut sorbet.

I'd say yes - except that most sorbets use a simple syrup. And simple syrup requires heat to get the sugar to dissolve in water. (At the very least, you'd need to pour boiling water into the sugar.) Plus, sugar probably can't be considered raw - since it's cooked in processing.

The recipe above works because the fruit used (dates) contains a lot of natural sugar. Sugar is critical in making frozen desserts because it helps in crystal formation - and depresses the freezing point of water to keep the ice from becoming rock solid in the freezer. (The salt in the recipe also helps with that.)

Dates are also very dense, with little water. Most fruits have so much water and so little sugar that you can't really use them on their own in an ice. You need to add sugar.

Ice making is very tricky chemistry. You have to have the water/sugar or water/sugar/fat balance just right or you end up with something truly awful.
