I collect cook books, and here is a recipe from a woman who is a bit famous here in Oklahoma city.
Berry Cobbler 1 (#2) can of berrie (any fruit can be used) 2 cups water 1 Tbsp cornstarch Place the above ingredients in a deep baking dish. Cover with a rich biscuit dough made with.... 2 cups of all purpose flour (sifted) 1/4 cup sugar 1/2 cup of lard or shorting 2 1/2 tsp baking powder 1 scant of cup sweet milk 1/2 tsp salt Mix ingredients. Roll crust really thin. Measure to cover your baking dish. Pour fruit in pan. Then cover the fruit with dough, cutting air vents on top of crust. Pinch sides. Sprinkle with sugar and dot with butter. Cook at 425 degrees for 10 mins. then reduce to 350 degrees. Bake until crust is golden brown. Like I said this woman, is named Thelma Allen, and she is well known in Oklahoma for her cookbooks. All I have is the Betty Crocker version:
Fresh Peach Cobbler Prep: 25 min; Cook: 10 min; Bake: 30min Serves 6 1/2 cup sugar 1 tablespoon cornstarch 1/4 teaspoon ground cinnamon 4 cups sliced peaches (6 medium) 1 teaspoon lemon juice 3 tablespoons shortening 1 cup all-purpose flour 1 tablespoon sugar 1 1/2 teaspoons baking powder 1/2 teaspoon salt 1/2 cup milk 1. Heat oven to 400 degrees Fahrenheit. 2. Mix 1/2 cup sugar the cornstarch and cinnamon in 2 quart saucepan. Stir in peaches and lemon juice. Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Pour into ungreased 2 quart casserole dish; keep peach mixture hot in oven. 3. Cut shortening into flour, 1 tablespoon sugar, the baking powder and salt in medium bowl, using pastry blender or crisscrossing 2 knives, until mixture looks like fine crumbs. Stir in milk. Drop dough by 6 spoonfuls onto hot peach mixture. 4. Bake 25 to 30 minutes or until topping is golden brown. Serve warm and, if desired, with whipped cream. Variations: Fresh blueberry cobbler: Substitute 4 cups blueberries for peaches. Omit cinnamon. Fresh cherry cobbler: Substitute 4 cups pitted red tart cherries for the peaches. Omit cinnamon. Increase sugar in cherry mixture to 1 1/4 cups and cornstarch to 3 tablespoons. Substitute 1/4 teaspoon almond extract for the lemon juice. I have used this recipe to make peach cobbler and it was okay. Kind of bland and not enough of the doughy stuff, and it was more like biscuit dough than yummy cobbler crusty dough. But if you're desperate, you could maybe double the dough part to make enough to cover the entire dish and add some extra cinnamon and sugar. You can mail me a piece! | |
