what about a stir fry, make some rice, add other veges u have, add a bit of sauce, whateva, bbq or soy sauce and eat up?

I'm with missmad. You can't go wrong with a sauté in olive oil with some brown or mixed rice. I would grill some meat of some sort to go with it. Served with your beverage of choice.

On your menu tonight:

" Auntie Ottie's Salad w/Warm Vinegraitte and Fake Mushroom Risotto"


1.Take the red and green peppers and sautee in olive oil with a sprinkle pinch of salt until slightly charred. At this point add a splash of red wine vinegar or balsamic vinegar with a healthy pinch of sugar and 1/8 tsp. mustard, tossing the veggies in the juices. Place the warm veggies on a bed of dark salad greens which has been lightly sprinkled with salt &pepper, top with pan juices that will act as a warm vinegraitte.

2. In a medium sized pot, sautee the mushrooms and onions with 1 tbsp.garlic in olive oil over medium heat until slightly soft, being careful not to burn the garlic because it becomes bitter. Add one cup of the rice of your choice and sautee with the veggies until it becomes saturated, be careful not to char or burn the mixture. Increase the heat, immediately adding 2 cups of chicken or veggie broth and bring to a rolling boil for about a minute. Reduce heat and cook until done. At this point, add 1/2 cup parmesean cheese, 1 cup of wine,1/2 cup water, and toss the mixture (it should be moist and sticky) with a handfull of chopped herbs such as basil, parsley, oregano, or a mixture of all three. If using dried herbs then use only a teaspoon. Add more parmesean to make the mixture a bit more sticky if you like, but keep adding a little water to keep the mixture slightly "porridge-like" and prevent it from drying out. If needed, add additional salt to taste. Serve in warm bowls topped with cracked black pepper and and additional parmesean. You've just made "Fake Risotto" cool
