This is what I am making:
Finska pinnar 50 stycken 50 g sötmandel 5 bittermandlar 4,5 dl vetemjöl 1 dl socker 200 g margarin eller smör Till pensling och garnering: 1 äggvita pärlsocker samt hackad sötmandel Sätt ugnen på 175 grader. Skålla mandeln några minuter i kokande vatten, kyl av och skala och mal mandeln eller mixa i matberedare. Blanda mandel med mjöl, socker och matfett i en bunke eller i matberedaren. Slå in i plastfolie och kyl degen i frysen några minuter så blir den lättare att rulla till fingertjocka längder. Lägg dem tätt intill varandra. Pensla med den lätt uppvispade äggvitan. Strö på pärlsocker och hackad mandel. Skär längderna i 4 cm långa bitar och lägg dem på smord plåt eller bakplåtsduk eller -papper. Grädda ca 12 min. I have decided. | |

If you ever feel like chocolate, bake this Collapsed Chocolate Souffle Cake. It's so easy and very rich and very good. Melt 500gms dark chocolate with 120gm butter and cool. Separate 6 eggs. Add 90gm caster sugar to egg yolks and whisk until thick and pale in colour. Add 1 tsp Vanilla essence, 150gm cream and 2 tbspn of rum (or cointreau is good too). Mix together with the chocolate Beat the egg whites until stiff and forming peaks. Gently add half the egg whites at a time to the chocolate mix to keep it light. Line a 23cm flan tin with greaseproof paper, pour in cake mix and bake for 25min at 175degrees Centigrade. The cake will rise and start to form cracks on top. Take it out and cool for an hour before serving. Serve with creme fraiche or marscapone. I've made it 4 times in the last month and it's been good every time. You only need a small piece to satisfy you and it can go around a lot of people. | |
