Eating healthy in the United States is easy - provided you are willing to spend more than 5 minutes on your meals. (In other words, you ain't gonna get it at a drive-thru - you have to learn to cook.) For a quick dinner, I like to make a frittata - with roasted potatoes and green beans (or broccoli or spinach), a little bacon, eggs and cheddar cheese. It only takes a few minutes because I roast the potatoes and cook the bacon ahead of time. (Cooked bacon keeps beautifully in the freezer.) Another fast dinner is based on salade nicoise. Put some roasted potatoes and roasted or blanched green beans on a piece of heavy duty foil, add some nicoise or kalamata olives and a few grape tomatoes, then dump in a can of olive oil-packed tuna, drizzle with lemon juice, and toss in a sprig of thyme and some cracked pepper. Seal the foil packet and bake it in a 350-degree oven just until it's all heated through. (About 20 minutes or so.) The key to eating healthy is to shop the periphery of the grocery store (where the fresh food is). Stay out of the middle. That's where all the high fructose corn syrup and soy-laden crap is. I will usually cook my lunch the night before which usually consists of: lean chicken breast with garlic season and a little virgin olive oil, an assortment of vegetables(usually of the frozen kind, but they are still nutritious), and a baked sweet potato with a little virgin olive oil. The price for that meal comes out alot less than if I were to dine at some fast food place. | |

me too, i just replace the sweet potato with green salad and there i go.. today i have had two pieces of red jamaican tilapia, and a green salad dressed with lemon.. it was delicious, quick, cheap and easy.. A few years ago, I went Brazil and bought some squid from a local fisherman. I had some friends who breaded it and cooked it up. DELICIOUS. That was the first and last time I have ever had squid.
