Right click on the song you want to delete --> 'Delete' (dunno if it's actually 'delete', since my iTunes is in Finnish, but I assume it is )
If you want to delete a whole album, use ctrl + left click to select all the stuff you want to delete and then right click & delete.

If you want to songs to stay in your iTunes library but don't want them to end up on your iPod, click on the small box next to the song (removes check mark). Songs with unchecked boxes don't end up on your iPod.

I do it by managing the playlists and controlling which playlists end up on the ipod. But it's more work I think, than what you described. I create a playlist for each album.

Or you can uncheck the songs in your computer and update your ipod. They won't be deleted from your computer, but they'll be deleted from your ipod.
