I baked peeled, sweet potato chunks in a bit of olive oil (dusted with cinnamon, nutmeg and ginger). I'll eat them for lunch tomorrow with some spinach and turkey & apple sausage. And, I'll run at the gym, tomorrow morning. g'night, Org. | |

Ideally, I should have removed the top from the baking dish, to allow them to roast a bit. I got the olive oil idea from the Internet, but I love those seasonings together. The ginger and olive oil helped balance out the sweetness, and nutmeg just works in all sorts of stuff. My house smells great from it all. | |
