I LOVE cottage cheese with bacon and shredded cheddar cheese mixed in smile

Also:

1 tub cottage cheese
1 pkg. raspberry jello mix
1 pkg. cranberry jello mix
1 big tub cool whip
1 bag thawed frozen raspberries (or 1 pint fresh)

Yesssss! wave

1. large curd mixed with chopped celery, vine tomatoes, cucumber, sea salt, fresh cracked black pepper, drizzled with extra virgin olive oil

2. small curd pureed and added to lasagne as a low-fat(and low cost!) replacement for ricotta

3. Cottage Cheese Pancakes:

(SWEET VERSION)

3/4 cup cottage cheese
4tblsp. oil or melted butter
1 1/2 tbsp. brown sugar
3 tbsp. flour of choice (white, wheat, corn,or spelt)
2 small eggs
pinch of salt

serve drizzled with honey syrup (tbsp. honey boiled boiled w 1/4 c apple juice), or chopped fresh fruit


(SAVORY VERSION)

3/4 cup of cottage cheese
about 1/4 cup chopped onions
3 1/2 tbsp.oil or melted butter
2 small eggs (or 1 1/2 large)
3 tbsp. white or wheat flour
salt & pepper to taste

serve w/cured ham & thinly sliced tomato, or smoked salmon, sour cream & chives

yup.i make cottage cheese lasagne all the time. but you know,in italy cheese is served as a course unto itself, right before dessert. it's not uncommon to have a bit of ricotta on a small cheese plate to season at liberty with a little salt,pepper, and/ or olive oil on your table.

ricotta is also used in many fresh italian desserts as well as an ingredient for salad dressings. it's goooood nod

Texture is crucial to me, I can't get past the look of it to taste it. boxed & I imagine the texture would send me into shock shake
