Anx or Any other Vegetarian Give me some Veggie Man Recipes

Something quick easy and filling. I feel like going vegetarian 2 to 3 days a week. Perhaps it will cure my killer gas that is now on a 3 day streak. Recipes quick and easy please.

I think I offered you this before, but in case I didn't, this is my favorite Trader Joe's standby:

You'll need:

1 jar, TJs curry simmer sauce (Thai Green Curry is my fave, but I always buy a variety just so I don't get too burnt out on one kind)

1 package EXTRA-FIRM tofu

AND/OR

1 bag frozen veggies (whatever looks good to ya, TJs has some interesting combos)

Wok oil or garlic oil (anything with some flavor to it)

1 cup rice (I prefer basmati, but whatever ya got)

DIRECTIONS:

Cube tofu, or if you're not feelin' the tofu, thaw your veggies in the microwave. Or, if you wanna spoil yourself, cube some tofu AND thaw your veggies in the microwave.

Next, take whatever you just cubed and/or thawed and dump it in a big skillet/wok/pan with the wok oil. Sautee that stuff till it's nice and golden. If you have ground pepper, grind some over your tofu/veggies.

Then, when your sauteed stuff is ready, dump the simmer sauce into the pan, mix a bit, turn down the heat and let it simmer for about 10 minutes. While you're waiting, prepare your rice.

The whole thing takes about 20 minutes to prepare, if that. And I usually have plenty of leftovers for work!

Simmer sauce: $2.50ish
Rice: $2.99 (for a big bag that will last you a while)
Tofu from TJs: $1.00
Bag o' veggies from TJs: $1.99

TOTAL: Eight bucks and some change (and you'll have rice and probably half a bag of frozen veggies left over).

Not bad. Toss in some chinese chili sauce while you're sauteeing and it gets even better. drool

yup, just a good ol' thai curry takeout dish, only fresher and a little cheaper. it puts me in a food coma every time. stoned

Vegetarian Pho Bo
(Vietnamese Noodle Soup)

(Serves 6)
Ingredients

8 cups Vietnamese style broth (see recipe that follows)
1 pound rice noodles
One 8-ounce package seitan, drained
1/4 cup bean sprouts
1/2 cup shredded cabbage (such as Napa cabbage)
1/2 cup tender greens, torn into bite-sized piecescup basil leaves
1/2 cup cilantro, coarsely chopped
3 scallions, thinly sliced (both green and white parts)
3 Tablespoons chopped, roasted, unsalted peanuts (optional)
1 lime, cut into wedges
3 fresh red or green chili peppers, seeded and cut into fine rounds
Salt and freshly ground pepper to taste
Directions

Make the broth as directed. When broth has been simmering for about 10 minutes, soak the noodles as follows. Bring 4 quarts of water to boil in a large pot. Remove from heat, add noodles, and let soak around 15 minutes, stirring occasionally until noodles are pliable and easily separated.
Drain the noodles and divide them among six bowls. Simmer the seitan in the broth until heated through, about 4 minutes. Remove the seitan with a slotted spoon and slice thinly into six portions. Add to noodles.

Assemble the soup by placing the bean sprouts, cabbage, greens, basil, cilantro, scallions, and optional peanuts on top of the noodles and seitan. Ladle the hot broth onto the noodle mixture.

Serve with a plate of lime wedges, chili rounds, and salt and pepper for individual seasoning.


i like asian vegetarian food in general..but i love vietnamese food..

Some veggies cause gas too, stay away from these

Broccoli, brussels sprouts, cabbage, and cauliflower
Corn
Cucumber
Green peppers
Kohlrabi
Onions and leeks
Radishes, rutabaga and turnips
Sauerkraut

1 can sloppy joe sauce (I check the label to make sure it's totally "veggie" but that may not be important to you)


Put both in skillet. Mix and heat through. Serve on bun with fresh chopped onion.
