It's also known as "seitan". It's pressed wheat gluten. It's a veggie thing, quite different from tofu, it has an earthier taste and a meat-like texture.

I always found tofu rather spongy, I am intrested in alternatives...

Here's the wikipedia article on it: http://en.wikipedia.org/wiki/Seitan

It mentions it's only available at health food and Asian markets, but I get it at my regular grocery store. I suppose it depends on the area you're in. Use it in place of meat in any stir-fry/asian recipe or really anything you'd use pieces of meat in. I've used in burritos as well. And I make a FABULOUS salad with it. You can fry it quite crispy (which is what I LOVE about it) and the texture, as I said, is a lot meatier than tofu and other meat substitutes. It's high in protein also, of course.

Just had a look at at the vegitarian resource group website

I am gonna give it a try if I can find it, I am not veggie but occasionally cook eastern food that requires tofu (which I cannot abide) I think this would be a great substitute.

supper always make me think of a late night meal, they call dinner here "tea" and the older generation would have it at 5pm or so, so a supper was needed later before bed.
