I used to make a fabulous (if I do say so myself) ginger-brandy cheesecake with a gingersnap crust. It was positively heavenly, but I've lost the recipe and can't remember it well enough. sad

i make a mean mean MEAN stir fry, especially if you like it spicy. nod

i also make really good curry dishes, but i need a little help from trader joe for those...still, i can rock a jar of green thai curry simmer sauce like nobody's business! lol

I just got done cooking a mean omlette with left over carne asada, tomatoes, cilantro, spanish rice, and peppers with a boal of date, walnut, and raisin oatmeal on the side. Breakfast of champions If I was not off for the summer this would be a weekend meal only!

What do you cook Dani? I actualy relax cooking, after a long day of work...it's nice to know I am spending some quality time with my kids in the kitchen, yes I make them help!!

Mostly Southern/Comfort type foods.

(Southern Comfort giggle )

Anyways.....Last night I made beef stew, tonite I'm making lasagna.

Last week I made, stuffed peppers on e day, baked a whole ham with mashed potatoes and biscuits the one note, halushki over the weekend. I made brownies and a peach pie on sunday.

I make anything and everything.

Lol! Now let me add how I can't bake. Well, my nephews and nieces from Mexico were visiting and I said, "Hey lets make chocolate chip cookies". So they all looked at me surprised when I took out a frozen package from the freezer and it was those prepared ready to bake chocolate chip dough circles. My nephews and nieces thought I was going to make the dough and actualy prepare the chocolate chip cookies. lol
I really like spicy food. I mostly put Jalapenos on a lot of my food.

Any kind of casserole or stew, I kick ass at those... flavoring potatoes roasting in the oven, I rock at that too. hmmm Pot roast as well, but do it very rarely.

Lately it's my quesadillas, but I jus stole the recipe from America's Test Kitchen.

But I've adapted their recipe to make burritos, also.

Quesadillas are cool. Do you make them with corn or flour tortillas?
I really like spicy food. I mostly put Jalapenos on a lot of my food.

Quesadillas are cool. Do you make them with corn or flour tortillas?


Flour, but there's corn in the filling. Corn tortillas would probably be good, too, though

1/3 cup corn (heat this on a dry pan and set aside once it browns & pops)

fry up:
oil
1/3 cup red onion
large clove garlic
3/4 teaspoon (I think?) chili powder
1/3 cup black beans (crush them a bit when you add to the pan)
add the corn & remove from heat

salt & pepper
some lime juice

2/3 cup grated cheese
jalapenos (optional)
cooked chicken (optional)

put half the cheese in one side of a heated tortilla, then half the mixture of the rest on top. fold the tortilla, brush the top w/oil, and salt it, then fry on clean pan, brush, salt, and flip when the first side browns a bit.

put some guac & sour cream & salsa on top. I love these because they're complete meals.

Wow. I just make then out of flour or corn tortilla and just put a piece of white Mexican cheese in the tortilla or add a piece of ham.

I know, I was never really excited by them before, but these are so complete I could eat them all the time (and I do!)

I make burritos with the filling, along with rice, lettuce, sour cream, guac and salsa.
