Mole can be made from scratch, which I do, or bought as a paste and reconstitued. It's a sauce simmered with chicken or turkey.
The sauce is made from3 different chiles,coriander seed, peppercorns, cinnamon, clove, fennel seed,all toasted and ground. Along with tomatoe garlic, onion, raisin. Throw in toasted almond, pumpkin seed, and unsweetened chocolate. The blend of flavors is to die for, if you like tasty food.


Mole drooling

My Mom used to make mole, she used to claim it took forever to make! Is that true, or is that one of those white lies Mom's say, to make the family feel guilty?

Fried corn tortilla taco shells. Beer batter fried striped bass and walley.

This is the frying part. There weren't too many dirty pans, just what you see there, and the cousinart, and cutting boards, which aren't shown. I usually stay on top of it as the kitchen is small and gets easily cluttered. What's most important for pans that have batter, use ice water to clean as warm water expands the flour and makes it sticky and harder to clean.

In Sept. of 1992. I had to dig up my travel diary as it was so long ago. Bought Beluga caviar for $5.00 a tin. Purchased alot to bring home. Tourists were just starting to go there, and everything was pretty cheap.

Last time I made it, I managed to find authentic Mexican chocolate. Otherwise I use unsweetened chocolate as it adds to much sugar unnecessarily for the other types.
