Reading the comics is akin to joining a Roller Coaster club and traveling the country with other zany thrill seekers. I know I'm stereotyping here, but it makes no sense to me why a full grown adult would collect comics. That was not your original question. You first asked why an adult would want to read comics which is totally different than asking why an adult would collect comics. And I'm also assuming you mean start collecting as opposed to continue to collect as they have done for years which makes total sense because--to use your rollercoaster analogy--they have already traveled half of the country riding them so why not continue? And asking why an adult would want to start reading--like simply buying the collected trade paperbacks of complete stories--is like asking why would an adult want to start going to museums.

After seeing the movies, and reading the discussions about their merit of lack of merit here, it makes me want to check out the respective series. Where would one start? Anyone else love the movies, but haven't read the comics? for the X-Men, there are many options. Spiderman, too. Marvel produces trade paperbacks collecting each story arc for many titles, these days. If you're looking for stuff that's relatively close to the movies, check out the Ultimate X-Men and Spider-man ones. Also, if you want the really good, classic, original stuff, check out the black and white collections. Essential X-Men has I think 7 volumes. I'm not sure how many Spider-man has. There are also the color, hardcover Marvel Masterworks that collect about 10 issues a piece, but they're more expensive. If you're looking to get a lot of bang for your buck, go for the Essentials. Even though they are in black and white, there are usually 20+ issues in each book with a price tag of around $15. Essential Spider-Man is 8 volumes + 3 volumes of Essential Peter Parker, The Spectacular Spider-Man & 2 volumes of Marvel Team-Up

The Frank Miller Batmans are a good place to start. I think you can get them all in graphic novels. Very gritty and I think they inspired both the Burton films and the newer films.
Todd McFarlane also did a brilliant series of Spiderman featuring Wolverine and Sasquatch(I think). [Edited 5/24/07 12:59pm]
