Me too. Potatoes are a huge part of the Swedish food culture, probably because they saved our lives during a great country-wide famine a few hundred years ago. It's not considered a side dish but rather an integrated part of the meal. These days we of course eat pasta and rice too sometimes, but we will never give up the potatoes. Boiling them is still the most common way of cooking them.

I'm soooo there. Do you like red potatoes?

Damn-it I'm hungry again.

No, it came to Sweden earlier than that, but it was during the 19th century that it gained widespread popularity.

I'm not too fond of parsnip but it can be good when it's fried together with other root vegetables.

Worried about how i was gonna do with such a big thing, i very soon got accustomed to the large size and found myself doing the grossest thing that i would never normally do at home. I'd be thirsty in the middle of the night, and i'd grab for the ginormous Coke, drink it and go back to sleep like it was water! lol I could never make a habit out of it, but for some reason i found it fun to do this shhh lurking

I heart potato pancakes. My mom will make them after Thanksgiving or Christmas if we have a bunch of mashed potatoes left over. She makes them into patties and fries them in a frying pan with butter. drool drool

How do you make them? Just diced potato, seasoning & a little egg to hold it together? Is there flour involved? confused

Once the potatoes are already mashed up with milk or water added to make them fluffy, my mom just makes flat pancakes out of them, then fries them in butter until they're brown. They are sooo good. I've never had potato and broccoli pancakes, but they sound delicious. drool

Yea, there's a difference. Here's a potato pancake:

You can also mix in broccoli or spinach. It's different from a traditional pancake hammer
