The Official Org Cookbook

With all this talk of recipe's and stuff lately, plus the fact that I'm off this week and have some time to eat, we should make an org cookbook. I'll start with my chicken parmesian pasta.
Ingredients:
4 skinned and boned chicken breast halves
1 large egg, lightly beaten
1/2 cup Italian-seasoned breadcrumbs
2 tablespoons butter or margarine, melted
1 3/4 cup spaghetti sauce
1/2 cup shredded mozzarella cheese
1 tablespoon grated Parmesan cheese
1/4 cup chopped fresh parsley


Directions:

Place chicken between two sheets of heavy-duty plastic wrap; flatten to 1/4-inch thickness, using a meat mallet or rolling pin. Dip chicken in egg, and dredge in breadcrumbs. Make sure the crumbs are thick though, makes the stuff tastier.

Cook chicken in butter (some people substitute margarine/spreads, but fuck it everything is better in butter) in a large skillet over medium-high heat until browned on both sides. Spoon spaghetti sauce over chicken; bring to a boil. Cover, reduce heat, and simmer 10 minutes.

Sprinkle with cheeses (real parmisian and a little swiss) and parsley; cover and simmer 5 additional minutes or until cheeses melt. This is some good eatin


All of you have different recipes for noodles and shit so ya'll can make your own noodles.

Zesty Morning Protein Shake drool

Ingredients:
1 cup scrambled eggs
1 cup orange juice
1/2 cup grated cheese
2 pieces lightly toasted bread
1 cup orange halves, peeled
8 tbsp tabasco sauce

Directions: Blend ingredients in blender. Serve chilled!

Its simple but effective man food. Takes like 30 minutes with prep. But its a hearty meal I tell ya. It works for 2 days. I eat two of the things for dinner. Then I usually take one for lunch. Then eat the last one as a snack when I get home!

Sunny Peach Pie


INGREDIENTS
1 pie crust of your choice
3 to 4 cups sliced fresh peaches
2 teaspoons unbleached flour
1/4 cup peach preserves (the kind with no added sugar)
1 teaspoon freshly squeezed lemon juice
1 teaspoon freshly squeezed lemon juice
1/2 teaspoon ground cinnamon
Freshly grated nutmeg
Dash of sea salt.

Preheat the oven to 400 F.

In the unbaked crust of your choice, arrange the peach slices, in overlapping concentric circles. Sprinkle the peaches with the flour.

Combine the peach preserves, lemon juice, cinnamon, nutmeg, and a dash of sea salt in a saucepan and heat until hot while stirring.

Pour this glaze over the peaches and bake for 10 minutes, then turn the heat down to 375F and continue baking for an additional 30 to 35 mintues. May be served warm, at room temperature, or cold.

Italian Wedding Soup

INGREDIENTS
1/2 pound extra-lean ground beef
1 egg, lightly beaten
2 tablespoons dry bread crumbs
1 tablespoon grated Parmesan cheese
1/2 teaspoon dried basil
1/2 teaspoon onion powder
5 3/4 cups chicken broth
2 cups thinly sliced escarole
1 cup uncooked orzo pasta
1/3 cup finely chopped carrot

DIRECTIONS
In medium bowl, combine meat, egg, bread crumbs, cheese, basil and onion powder; shape into 3/4 inch balls.
In large saucepan, heat broth to boiling; stir in escarole, orzo pasta, chopped carrot and meatballs. Return to boil, then reduce heat to medium. Cook at slow boil for 10 minutes, or until pasta is al dente. Stir frequently to prevent sticking.

Here's my asian-y salad.

Cook seitan (mock duck/pressed wheat gluten) in garlic oil with cracked pepper and Bragg's Liquid Aminos (soy sauce substitute with WAY less sodium and amino acids that are good for you).

Plate either spring greens or spinach and a couple different kinds of lettuce (whatever you like) and arrange (so it looks pretty and colorful) carrots (I like julienne), red peppers, pea pods, red onion. Add a few mandarin orange segments and a handful of sliced almonds. Top with seitan. Drizzle a bit of any asian sweet ginger vinagrette.

YUM.

See? It's not even really a recipe. It's just putting things together. lol

You could use beef. Tofu would work too, but I prefer a more 'meaty' texture for this one. smile

really, there's no official recipe for my biscuits and gravy. it's based on how my mom does it and it's really simple.


1. make a roux. different people make rouxs different ways, but it's pretty basic. make a good 2 cups worth in a big skillet.

2. dump a whole package of boca crumbles into the roux (microwave the crumbles first - make sure its thawed out and warm).

3. add lots of black pepper. LOTS. i'm serious. get a little ridiculous. this is the secret: LOTS OF BLACK PEPPER.

4. let it simmer while you get the biscuits ready. when the biscuits are ready, the gravy should be ready. eat up!

Avocado and Black Bean Salad


1 cup carrot juice
¼ tsp thyme
½ tsp salt
1/8 tsp cayenne or red pepper
Garlic powder to taste (optional)
½ cup quick-cooking barley
2 tsp lemon juice
1 can black beans, drained and rinsed
1 cup diced, fresh tomatoes
½ medium red onion, diced (optional)
1 tsp olive oil
2 diced avocadoes


Combine carrot juice, thyme, salt, cayenne pepper and garlic powder in a saucepan. Bring to a boil over medium heat. Add barley. Reduce to a simmer. Cover and cook until barley is tender – about 15 minutes. Let barley cool. Mix all other ingredients together then add barley.
Eat alone or with tortilla chips. Enjoy!

Quick and Easy Meatloaf.

1 lb of hamburger
1 medium sized onion chopped
1 cup of oatmeal (not instant)
1 egg
1 16 oz. can of Hunt's Tomato Sauce
salt/pepper to taste
mix, place in bread tin and bake at 350 for bout an hour or till done.

ketchup is optional for those freaks that think ketchup should be put on meatloaf.

Day Old Donut Bread Pudding

6 day old donuts of your choice, cut into bite sized pieces
2 granny smith apples, peeled and diced
1/2 cups raisins or dried cranberries/fruit (i use a combo)
2 cups half and half
2 eggs
1/2 cup sugar (I use raw sugar)
1 tsp. vanilla
1 tbls cinnamon


Mix half and half, eggs, sugar, vanilla and cinnamon in bowl until well blended, set aside. Place donuts, apples and dried fruit in greased, baking dish (13X9). Pour milk mixture over top of donuts and press down with a fork until liquid is soaked into donuts. Place into 350 degree oven for 45-55 minutes.

I forgot. I actually usually use green onions in this. Much better. I knew something was off. lol

I would post some of my favorite recipes, but I don't use exact amounts when I cook. I just make it up with whatever I have on hand, and I eyeball all of the measurements. I'll have to figure some of them out.

No-bake Cheesecake

Beat together till fluffy:
3 8oz bricks of Cream Cheese (slightly softened)
1 12oz tub Cool-Whip
3/4 c. Powdered Sugar

Crush the heck out of 1 1/2 bricks of graham crackers and spread in the bottom of a 9 x 11 pan.

Melt 1/2 stick of butter or margarine, drizzle over the graham crackers and press to the botom of the pan to form a crust.

Sprinkle with Cinnamon Sugar

Spread cream cheese mixture over the crust and let set in the fridge for an hour.

Cut into squares and place on individual plates.

Pour pie filling, fresh fruit, chocolate sauce or whatever topping you'd like over the pieces smile


I LOVE this recipe...it's lighter than real cheesecake and so yummy drool
