My recepie for a fantastic evening lol
1 telephone
1 Credit card

Pick up phone, dial number, request ticket for ONA (Europe)
Add credit card details, stir well. End phone conversation.

Jump for joy!!! lol

Shrimp and Lobster Scampi (MY way... lol)

quart heavy cream
big blob of butter
big blob of sour cream

tomatos (diced)
onion (diced)
fresh basil
fresh garlic

lobster tails
shrimp

Sautee onions tomatos and garlic in butter. Then add the heavy cream and sour cream, mix for a little bit add lobster tails and shrimp.

Serve over linguine and eat up!!

Don't forget the breath mints, that garlic can get stinky!

Carrie..I never seen a scampi recipe with sour cream b4...I'll have to give it a whirl.

there were a few more I liked...like echo's zucchini recipe...cause I have zucchini comin' out my ears right now...that and tomatoes...ugh! I just made a home made cream of tomato soup last night...mmm perfect with grilled cheese sandwiches.
oh yeah...and I've been making a boat load of zucchini bread too...mmmm! now I'm hungry!

chocolate sandwich:

you take a coupla graham crackers and you puts a square of chocolate on one of the crackers. then, mash a marshmallow down real flat and stick it on there too. next spoon out some caramel and smears it on the marshmallow. if there are any sprinkles in the cupboard, this is the time to add them in. as many as you want and don't be shy!!!
finally, a nice layer of peanut butter on one side of the other graham cracker to make a sandwich and presto!

With all the zucchini being brought in from the garden i pulled out everyones favorite recipes.

Zucchini Pie - (this isn't a sweet pie)
3 small zucchini or yellow squash, sliced thin
1 small onion chopped fine
2 tblsp chopped parsley
1 cup of Bisquick
4 eggs
1/2 cup vegetable oil
1/2 cup parmesan cheese
salt, pepper, garlic powder to taste

Make a batter of Bisquick, eggs, oil, parmesan and seasonings. Beat in onion and zucchini. Pour into oiled 13x9" oblong pan. Bake about 30 minutes at 350 degrees or until cooked and set through. Use the broiler during the last few minutes for additional browning if desired.

Chocolate Zucchini Cake (very sweet)
1/2 cup butter or margarine
1/2 cup of oil
1 3/4 cup sugar
2 eggs
1 tsp vanilla
*1/2 cup sour milk
2 1/2 cups flour
4 tblsp cocoa
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp salt
2 cups of grated zucchini

*If you don't have sour milk use 1 tblsp vinegar in place of 1 tblsp of the milk

Cream butter, oil and sugar. Add slightly beaten eggs with vanilla, beat. Sift all dry ingredients together and add all with sour milk. Mix in zucchini. Spread in a 9 x 13" oiled and floured pan. Top with a a topping of 1/2 cup chocolate chips, 1/2 cup brown sugar and 1/2 cup nuts. Bake at 325 degrees for 40 - 45 minutes.

Here is a recipe for Palacsinta
(in honor of my father)

4 whole eggs
2 cups milk
2 tsp. sugar
2 cups sifted flour
Butter
Mix flour, salt and sugar.
Combine well beaten eggs and milk.
Add egg and milk gradually to flour mixture, beating to a thin smooth batter.
Let batter sit for 1/2 hour. This gets rid of the raw flour taste.
Spoon 3 Tbls. on hot buttered skillet. Will be very thin. Tilt skillet quickly in a circular motion to distribute batter over skillet. Brown lightly on both sides.
Continue this until batter is used up. As each crepe is done, spread with strawberry jam, roll up lightly and sprinkle with powdered sugar. These can be made ahead of time and reheated in a slow oven for a few minutes. You can also serve crepes with a dollop of sour cream.

Oh, these are also very good with cottage cheese, apricot or prune lekvar or nutella filling too!

OX TAILS AND BEANS

Find some real meaty ox tails,season them with seasoned salt,pepper, garlic powder or fresh garlic chopped,curry powder and crushed peppers. Don't over season the meat or you will have hell. Boil the Ox Tails until thy're soft or falling off the bone. You can use any type of beans I prefer Pinto beans. Place the beans into the pot of boiling meat with some carrots and onions. Turn down heat to a med. flame and cook it thickens.
Good with rice and cornbread

Can serve up to 6 people
