It's pretty light & healthy, so people who want heavy sausage-type stuffing might not like it, but I do! I substitute chicken stock for the vegetable stock, and pecans for the walnuts. APPLE, RAISIN, AND WALNUT STUFFING 2 Granny Smith apples 3 Tbsp canola oil 1/4 cup walnuts, chopped 1 medium yellow onion, chopped 1 1/2 celery ribs, sliced crosswise 1/8 inch thick 2 cups bread crumbs or croutons 1/4 � 3/4 cup vegetable stock or water 1/2 cup raisins 1/4 cup flat leaf parsley, chopped 1/4 tsp fresh rosemary, chopped 1/4 tsp fresh thyme, chopped 1/4 tsp fresh sage, chopped 1/2 tsp salt 1/4 tsp black pepper Peel and core apples and cut into 1/4-inch dice. Put oil in a 12-inch heavy skillet over moderately high heat, then sauté walnuts, stirring, 1 minute. Add onion and celery and sauté, stirring, until softened, about 6 minutes. Add apple and raisins and sauté, stirring occasionally, about 4 minutes. Add herbs and sauté for 2 minutes. Remove from heat and toss with remaining ingredients. Moisten with stock as needed. Theres tension every year with me and my one sister n law over the pickled eggs/beets.
I guess before I came along she always made them. (Likeits so hard or something. Well, I didn't know that, so I made them too, and she showed up with hers, and was liek, OMG Daniela, everyone LOVES how I make mine. You shouldn't have made any. (Like theres SOOO many different ways to make them. ) Anyway!! As the dinner went on, everyone was like, Daniela, YOUR eggs are awesome. So like every year after that, she gets all pissie with me about the pickled eggs. Well, in the name of niceness. I am going to call her, and specifically ask her to make the pickled eggs. (Even though mine are better) | |

(to borrow from the south park guys) part of it, and i don't like the family aspect of it (cause i dont talk to 95% of my family), this is kind of a fun way of approaching it without feeling like i am contributing to two things i don't like. i would actually go to this heritage version if someone i knew was doing it. as it is, i will be flying that day, and i am gonna be forced to eat airline thanksgiving...
