i've just gotten used to the fact that thanksgiving is a meat-eater's holiday. there are 364 other days in the year, i guess. shrug

brick no sweetie, i am a woman who is always without leftovers nod lol most of my friends live outta town from school. it would be nice to be able to make something just in case one of them is stuck here in chicago and they need a place to hang out.

I don't know any. lol I'm not vegan. I'm just a vegan admirer. But I do make sure that when my vegan friends are about that they get food just as yummy as everyone. And my vegan friends know about good food, dammit. they HAVE to. lol I think being vegetarian often (note: not always) makes you a good cook and very conscious about taste and flavor and whatnot cause you have to seek out things out of the ordinary.

it doesn't have to be that way. i felt so bad for you when we went to Fridays and all they had was that thick ass (was it a portabello mushroom?) vegetarian burger and all of that cheese. i think it was the only vegetarian dish on the menu-sad lol

ok, twisted my arm! lol

here is my all-time favorite fall/winter recipe. it doesn't sound like much, but trust me, it's to die for! drool

Sweet Potato, White Bean, and Pepper Tian

3 medium-large sweet potatoes, peeled, quartered lengthwise, and sliced 1/4" thick

2 14-oz cans of small white beans, rinsed in strainer

1 red and 1 green bell pepper, cut into 1" chunks

1 medium red onion, cut into 2" chunks and sections separated

2 plum tomatoes, cut into 1 1/2" chunks

5 garlic cloves, thinly sliced

1/2 tsp salt

1 tsp dried oregano

ground black pepper to taste (don't be shy)

1/3 c olive oil

combine all veggies, garlic, salt, pepper and oil in a large bowl and toss well. pack mixture into two 8" x 8" baking dishes. bake at 375 F for 45 minutes


while that bakes, prepare the topping:

6 or 7 slices of rye bread, cut into 2" pieces (other bread works, too, but i love the flavor rye bread brings to this dish)

1/8 - 1/4 cup olive oil

garlic powder, salt, pepper, oregano to taste

mix bread, oil and spices in a bowl. add on top of the veggie mix after the first 45 minutes of baking, then bake for another 15 minutes, until the topping is golden brown.


i guess you could have it as a side dish, but it's so good, i like to make it my main course. lol it reheats well, too.

man, even their mac and cheese had meat in it! lol

that's one thing i have a hard time with in chicago. i never really had to worry about my diet in new york, because it's not such a meat-eater's paradise culture out there. i mean, yeah, there are steakhouses and whatnot, but it's more about the cuisine than it is about loading up on a truckload of carcass. out here, PEOPLE LOVE THEIR MEAT. why? BECAUSE IT'S MEAT. lol

i forgot people were like that till i came back to the midwest. it's like people have some kind of meat-eating quota they have to fulfill every day or else their insides will shrivel. it's an addiction? i don't know. i let people judge their own addictive behaviors. but you're right. there are some places - like that fridays we went to - that go out of their way to make sure meat is included in EVERY SINGLE ITEM. i'm surprised there weren't some slim jims floating around in my diet coke!

You should come out to our t-day some year. nod Yes, there will be a turkey, but almost everything on the menu is veggie-safe. And my friends can COOK!

lol I hear ya. Be thankful that you dont live in the south/mid-atlantic. THis is the bar-b-que capital of the frickin world. Everything is pork pork pork and beef. On the plus side, its forced me to become a much better cook. We have a few Indian restaurants, some gret Thai places, and Chilli's has one hell of a veggie burger. Aside from those places, there really isnt much variety for those of us who choose not to eat the carne.

Thanksgiving Main Course = Tofurkey. $10 at Trader Joes.

Thanksgiving Side Dishes = Usually easier to modify than you might think. Mashed Potatoes(Use vegan butter) , Sweet Potatoes (same, and no marshmallows), Bread Puddings (use rice/soy/coconut milk), Stuffing (vegetable broth).

If you're terribly keen on having a vegan ham, check out an Asian grocery store, as they tend to have lots of meat-analogues.

As far as the rest of the year goes, I'm fairly bachelor-esque in my cooking style (used to be a pot of brown rice, or a ww spaghetti, now I'm real big into sammiches), but these are some excellent sites for recipes and such:
