This results in ketosis, which despite what the Atkins folks would have you believe, is not a good thing. Among other things, it's rough on your kidneys. And you want to be nice to your kidneys. So, anyway, your body eats your muscles when you fast. And when you stop fasting, it takes work to rebuild those muscles. But it's very, very easy to build fat. So when your body weight goes back to normal, without a whole lot of work you'll have less lean muscle mass and more fat. Which means a slower metabolism, basically. That's the short version. If you want the biochemistry, I'll have to pull out the books. Oh, and most of the benefits are completely unproven.
