I know its Red, white and blue, but some idiots at Harvard say it should be Red, white, and Blue...YOU DON'T NEED TO PUT A COMMA AFTER A CONJUNCTION....

Personally, I'd write 'Red, white and blue' but that's just me. shrug

As for your second question, I spend a lot of my day emailing customers so I have to make sure things are grammatically correct, have the correct spelling, punctuation, etc.. At the moment, I'm having a war of words with my bosses over the use of hyphens. disbelief lol It's turned into 'Hyphengate'. confused

Basically, they don't want me to use them because they 'don't like the look of them' confuse; sod that, I'm waiting for an intelligent, reasoned response. (Bearing in mind their spelling is atrocious). I know I'll have to comply and stop using them - it's so ridiculous lol - but that's business for you. Makes you wonder what the point of studying English at degree level was. confused

peanut butter and jelly sandwiches (pre-made)
endives

See?

Without that comma after "sandwiches," it's a mad mad world where anything goes.

People who don't use the serial comma frighten me. It is like the gay marriage of punctuation, tunneling at the very foundations of our democracy.

This is why I use the last comma before "and" (the one after "sandwiches") It's clearer. But I think both are grammatically correct.
