Apple Skillet Cake

nod from scratch fresh outta the oven

smile wan sum ?



was my granny's fav cake to make and she used an old cast iron skillet

mushy which i now have and still use as well

do you have old family favs you enjoy serving ?

drool drool drool yes, please!

as for family faves...the only one i know of is my dad's jambalaya, but i haven't been able to afford all the ingredients for it so i haven't been able to get the recipe from 'im yet (he says once i get everything to give 'im a call and he'll teach me how to cook it). it sucks, because i'd love to be able to make a batch for my friends and share it.

baked apples w/ brown sugar and cinnamon - in ANY form - cobbler, brown betty, pie, tart, whatEVER - is a SERIOUS weakness of mine. drool

Apple Skillet Cake


1/3 cup butter
1 cup packed dark brown sugar
2 teaspoons ground cinnamon (divided)
4 medium apples peeled, cored and sliced 1/4-inch thick (3 cups sliced)
1 package (18.25 ounces) plain spice cake mix ( easy route )
8 tablespoons (1 stick) butter, melted
1 cup buttermilk
1/3 cup Molasses or dark corn syrup
2 large eggs



Baking time: 43 to 47 minutes.

For topping, place the 1/3 cup butter in a 10-inch cast-iron skillet and heat skillet over med/low heat to melt butter and with a fork, stir in brown sugar and 1 teaspoon cinnamon.Toss in Apple slices and cook for 2 minutes coating well then spread mixture out evenly in bottom of skillet.

For cake, place cake mix, melted butter, buttermilk, molasses, eggs and remaining 1 teaspoon cinnamon in a large mixing bowl. Blend by hand for 3-4 minutes mixing well Pour batter on top of apples in skillet, smoothing it out with rubber spatula. Try not to shift apples to sides.

Place skillet in preheated 350-degree oven.

Bake cake until it rises high in skillet and springs back when lightly pressed with your finger, 40 to 45 minutes. Remove skillet from oven and run a long, sharp knife around edges. Carefully invert skillet onto a heatproof serving plate. Cake should release itself from skillet. If it does not, simply run knife around side of pan one more time and let skillet rest on plate until cake releases. Lift off skillet.


This cake is best served warm with vanilla ice cream or whipped cream
