Allow to sit out at room temperature for 10-15 minutes. Serve chilled but softened. dublin mudslide was here Fucking HELL YES! That's exactly what I do, with this same flavor. Letting it soften around the edges really allows you to experience the texture and flavor, doesn't it? Dublin Mudslide and Chocolate Fudge Brownie are the reasons I haven't given up dairy yet. Green corn tamales are veggie, salsa, beans, rice...what else? Enchiladas, and burritos can have cheese substituted....Beans aren't veggie in my house as I use chicken or beef broth to stew, (layers the flavors). really, any dish you order in a mexican restaurant can be made veggie with beans and vegetables, and those options are on the menu - i never have to ask for a "special plate". most burrito shops in NYC and SF have a big section of veggie varieties from which to choose. veggie chorizo at burritoville in new york is The Deal. as for layering the flavor in refried beans, you should really try trader joe's spicy vegan refried beans - i could eat that stuff by itself if it didn't make me so i think people are stigmatized by words like "vegan" or "vegetarian" or "with tofu" on food labels. one thing i've tried to teach my friends is that good food is good food, whether it's meat based or veggie or what. i like good food. i just don't happen to eat meat. there are a lot of crap vegan/vegetarian food products out there, and i don't eat them. there's a lot of great stuff out there too, and it's a shame some people will never try it since it doesn't have any precious animal product in it. i think that's weird and neurotic. but more food for me, i guess.

Seriously! My brother and his wife are in town and staying in my house. I made a big dinner last night for everyone who came over: rice and beans, tofu stir-fry, veggies, salad. My brother thanked me for cooking and mentioned that his wife is a great cook. She replied, "Yeah, but I can't cook for them. I don't know how to make any vegetarian food." It cracks me up when people say that! I'm like, "Uh, yeah you do." You never make vegetables or mashed potatoes on the side? You don't know how to scramble eggs or cook rice? pee-oh-pull-ee [Edited 10/3/06 9:05am] The Normal Whores Club

Also: I just cracked myself up reading the sentence below literally. "I could eat that stuff by itself if it didn't make me so fart."
Why is that so goddamn amusing? Anx said: as for layering the flavor in refried beans, you should really try trader joe's spicy vegan refried beans - i could eat that stuff by itself if it didn't make me so

Although most of it is just stepping outside your comfort zone. I have many of both so when in Rome.... You have to get some of the cauliflower dish in 3 weeks from this fab Indian restaurant...

I know what you're saying as far as adapting main dishes that normally derive much of their flavor from meat. But folks will claim to "never" cook vegetarian food, forgetting that many of the things they cook and eat on a regular basis don't contain meat - like macaroni and cheese or eggplant parm. I like to make food from scratch. With vegetarian meals, it's just that we have three freezers full of game meat, buffalo, venison, elk, quail etc. to use. Although I do accidently cook vegitarian suppers.Borek (fillo dough stuffed with spinach and feta, with onion) as a main course:Welsh rarebit, altho I serve bacon on the side as is traditional.
