In my family, Sukiyaki;

1.5 # thinly sliced beef marinated in sake,sesame oil, Teryaki sauce, grated ginger, scallions (for 2 hours or >) Stir fry in wok in separate batches until browned, set aside.

Stir fry each separately; 2 onions thinly sliced, 3 carrots thinly sliced, 1 c mushrooms sliced (oyster, shiitake, or portabello) napa cabbage chopped. Set aside.

Combine 3 cups chicken broth, 1 cup sake, 1 cup mirin, 1 tsp sugar, 1/4 c light soy sauce. Set aside.

In 2 batches in lg corningware, wok or frying pan, combine ingredients, half in each pan. Split liquid mixture between the 2, simmer.

Add 1 box firm tofu, diced, between the 2 pans. Toss in a bunch of scallions.

Add more broth if you like it soupy.

Cook cellophane noodles in broth in another pan, strain, and split between 2 batches. (otherwise the noodles absorb too much of Sukiyaki broth if cooked in soup)

Serve in bowels. Can have rice on the side, but not needed.

Can serve with raw egg to dip beef slices in.

This is double the recipe and didn't last in my house 24 hours. Friends hear I'm cooking it, and it's an invasion.

That's one of my faves -but it has to be from the Husky.

If a trucker wouldn't eat it, it's not worth eating. smile
