I posted this on the quesadilla thread recently--it's my new favorite easy meal
"I saw them make a great recipe on America's Test Kitchen. I think I remember it. brown 1/3 cup corn on stove (no oil) until it pops remove, then add oil to pan cook 1/3 cup chopped red onion some garlic 1/2 tsp chili powder 1/3 cup black beans, then crush them a bit with a spoon add the corn remove add some salt & pepper & a tsp or so of lime juice heat two tortillas fill half of each one with 1/3cup grated cheese add some jalapenos if desired or cooked chicken if ya want. put half of the corn/bean mix on each tortilla fold tortillas brush with oil on top & sprinkle with salt heat on stove in pan--oiled side down--don't oil the pan when bottom is browned, brush w/oil & salt top again and flip remove & cut in wedges like a pizza top with guacamole, sour cream and/or salsa delicious!"
