Org cooks, gimme some recipes!!!

I could use some levity, right about now.

What are some of your favorite dishes to make?

Last night, I threw together something easy and cool: Grilled chicken breasts topped with pineapple chipotle salsa*, and broccoli topped with melted mozzarella/provolone. It was delish.

What are some of your favorite eats?

(Yes, I'm hungry...)

Spinach salad with marinated grilled chicken, mandarin oranges, walnuts and oil and vinegar dressing.

The one that I get the most requests for is my famous turkey loaf dinner.

Basicly you just get some quality ground turkey meat. You season it and mix in an egg white, mix it together well and then flatten it to about 3/4-1 inch thickness. On top of that you layer your own favorte turkey dinner fixings. Like stuffing, peas, sweet potatoes, cranberry sauce. You then roll that all up starting from one side. Close off any ends and bake it in a 375 degree oven until done. You can cut it and the spiral slice is filled with everything wonderful about thanksgiving.

WARNING! Once you make this, be aware you will be hearing "when you going to make that..." alot.

I've seen similar deals with beef. Great stuff. thumbs up!

Cooking isn't what I do for a living. So that would be a no. Unless by professional you mean talented, and as a good part of my lifestyle. Then That would be a yes.

Have you ever heard of TurDuckEn?

It is a turkey stuffed with a duck stuffed with a chicken.....weird, eh? Some company in Texas specializes in TurDuckEn. confused

I got this from Dr. Weil.


Grilled Asian Salmon
Phase 1
Serves 2
Purchase center-cut salmon fillets for this recipe — thinner fillets, cut from the tail end of the salmon, can too easily overcook on the grill. Tip: Salmon skin cooks to a tasty crispiness, so keep the skin on when grilling.
Ingredients
1 tablespoon sesame oil
1 tablespoon reduced-sodium soy sauce
2 teaspoons minced fresh ginger
1 teaspoon rice wine vinegar
2 center-cut salmon fillets, about 5 oz each
Instructions:
In shallow glass dish, combine sesame oil, soy sauce, ginger, and vinegar. Add salmon; turn to coat. Marinate, refrigerated, for 30 minutes to 1 hour, turning occasionally.
Preheat grill (medium-high heat); lightly oil grill. Place fillets on grill, skin-side up. Grill about 5 minutes per side. Fish is cooked when a thin knife blade inserted in center reveals that the pink flesh is almost opaque. Serve warm.

Here's my well-known recipe for "Pop Tarts a la Byron":


One (1) package of cinnamon Pop Tarts
One (1) toaster

Open package of Pop Tarts
Place two (2) Pop Tarts in toaster, one in each slot
Place toaster setting to "light"
Push down on toaster handle, watch Pop Tarts disappear inside toaster
When Pop Tarts reappear, place on plate to cool
Season to taste

Pound some chicken breasts out thin.
Brown it in a pan (w/butter)
add Marcella wine (careful, might flare up)
add some brown gravy mix to the wine.
Take out of pan (not cooked all the way)

Put chicken in oven pan or dish.
Poor marcella wine/gravy over it.
Place fresh (steamed) esparagus on top of chicken
Place mozzarella cheese over top of esparagus.
Put in oven Let the chicken cook the rest of the way.

Take out of pan with a spatula keeping each serving with layers intact.

Extras: Sometimes, instead of pounding the chicken thin, I slice a pocket and put in an apple stuffing. Also sometimes I'll add some portabella mushrooms to the sauce.

Scalloped Potatoes and a red wine go real well with this.




I also have a GREAT stuffed porkchop dish that I've been dying to cook again, but my wife won't eat pork.

Yes, I was a chef in a past life. Didn't pay very well, but it was a fun 8 years.

Awww, thanks. touched I'm good. I was struck last night -- and, usually whenever I cook -- by how easily adding something new can change an old standby dish.

I'm digging the suggestions.

BUT here's a simple, healthy snack I picked up along my journey: Take some seedless grapes and pop them in the freezer. When you're hungry, munch on 'em with zero guilt! Healthy, refreshing... yada yada yada. thumbs up!

Season a pound of shrimp, pan/stir-fry it in extra-virgin olive oil for a minute - no more than 2. Serve with:

Salad greens

And/or cooked rice or pasta

1 Pint Fresh Strawberries, chopped in quarters
1 Pint Premium Quality Vanilla Ice Cream
1 tsp. sugar or preferred sugar substitute
Balsamic Vinegar
Mint sprigs for garnish

Martini or wine glasses for serving


In a bowl, add chopped strawberries, sugar, and about 1 and 1/2 tablespoons of balsamic vinegar. Toss to coat and cover. Place in refrigerator for 1-2 hours to allow flavors to marry one another. The delightful surprise in this is that the balsamic vinegar HEIGHTENS the intensity and sweet flavor of the berries.

10 minutes before you're ready to serve dessert, take 1-2 large scoops of premium vanilla ice cream and place in a martini glass or white wine glass for presentation. Add 1-2 heaping tablespoons of the balsamic strawberry topping and garnish with a large mint sprig.

that's what my husband made for dinner tonight (his turn to cook) - he called to say can you boil some pasta, so I did, he came home stirred through a jar of sauce and served mad

falloff That's just too much. Not only did he cook something extremely simple, he made you do most of the work! Next time he'll probably want you to eat straight out of the can...as long as you open it for him.

A friend of mine makes killer apple dumplings. One of the tricks she uses to heighten the punch of the apples is she squeezes orange juice onto the apples right before she puts the dish into the oven. Must be the acid working in both instances.

eek okay. That's it. We need to officially go to HER house for dessert!!!

I have had an INSANE craving for a homemade apple thingy for about TWO WEEKS NOW and can't find a single thing at the bakery or the frozen food section to satisfy it...she sounds like she just might have the ticket drool3!
