I love quesadillas, they are soooo good. I love how the tortilla is grilled so that it's crunchy and not soft, and how you can put a variety of stuff inside of it. The one I had tonight for dinner had 3 different kind of cheeses and shrimp in it. That may not sound appetizing to some people, but lemme tell ya, it was sooooo darn good.

so easy to make, especially with the microwave. gotta love 'em.

oh, don't get your sombrero in a knot. i know how to make 'em the "real" way...but when i'm burnt out after a crap day at work, the eltrashoblanco quesadilla is a quick way to make something yummy for dinner.

and if you think THAT is heresy, i don't use pace salsa in my microdillas...i use chinese chili paste.

Yes, and an overwhelming yes. Add the salsa mix, sour cream ( so American ) , guacamole and grilled chicken, I'm in love. And it's an added bonus if the restaurant ( Mexican preferably ) makes a good horchata ( rice water, cinnamon, sugar and whatever else they're supposed to add, meet me in Saint Louis!
