Eh, I don't know about Americans but it is very common to eat liver all around Europe. As a form of patee or . When I still used to eat meat products I liked it quite a lot myself, but it's quite cheap as otherwise it wouldn't sell. Of course to certain extent I could approve of liver-eating even for some vegetarians as the liver is still a rather undesirable by-product in the meat-processing industry. Animals really don't get slaughtered for their livers.

Except for ducks. And mind you, that's one of the most expensive ingredients in the world.

I used to fish with chicken livers.
