I'm no expert, but after dining with Darin (being that he lives off of mexican food) for years I have figured a few things out: Soft shell tacos use smaller tortillas and are left open. Burritos are generally larger and are all closed and rolled up. In tacos, you'll throw everything on the inside (meat and/or beans, salsa, cheese, lettuce, tomatoes, onions, cilantro, what have you...), whereas for burritos, the fresh veggies will generally come on the side. Only the meat or beans, grilled veggies (if its a veggie burrito) and possibly cheese or rice will be on the inside. And you'll generally serve a side of lettuce and salsa and other goodies to load on the top. Also - no one ever puts rice in a taco. But it comes in some fast food burritos, though rarely in any burritos in an actual Mexican restaurant. I think that should clear things up. PS - It really does make a difference in texture and tastes. THANK you! Now, I've had plenty of closed-all-the-way-up things calling themselves soft tacos.
