I love cashews too. I tend to eat other nuts that I think are healthier, but nothing is yummier. Wanna hear something weird? I like cashews and pasta. As for the pasta recipe, you cook an onion, add tomato paste and usual pasta sauce spices (for me, basil, thyme, oregano, sage, black pepper, and salt) and garlic, puree it with a big handful of cashews, half a cup of nutritional yeast, and a can of corn. Cook some pasta, mix it with the puree, and bake it in an oiled cassarole dish at 350 degrees for a half hour uncovered. You sorta get a baked mac-and-cheese effect, but healthier.
