Ethiopian Food

We had at least a dozen Ethiopian restaurants when I lived in Denver. I moved to Albuquerque three years ago and - can you believe - there isn't a single Ethiopian or African restaurant here? I MISS IT!!!

Last weekend, I decided to make my own "combination plate" you typically see on the menu at an Ethiopian restaurant. It turned out soooo good, I just had to post a pic to share! Is anyone else on the Org a fan of this type of cuisine? I tell ya, if you haven't tried it... you just got to!

Anyway, I literally spent all f*ck*ng day in the kitchen Saturday, but it paid off! I made my own injera bread (which didn't turn out as good as the main dishes, despite using soda water and teff flour), berbere sauce, niter kebbeh (from ghee), and followed recipes from some cookbooks and what I found online.



The yellow dish is actually mashed lentils, cooked with onions, garlic, and jalapenos. The two red dishes are actually a spicy chicken (with hard-boiled eggs) and a spicy lamb dish, made with the berbere sauce. The green dish is collard greens cooked with onions and ghee. There's also a stew of veggies. The last dish is just a simple lettuce and tomato salad that has a mild lemon/vinegar dressing. It is good to use for cleaning the palate between samplings of the other dishes. I wish I could have had you ALL over for dinner....

Does anyone else like or crave yemiser we't, yetakelt we't, doro wat, or kitfo -- any Ethiopian food? (The Eritrians make a killer spicy spaghetti, by the way!)

I haven't had Ethiopian food in years, but I do like it very much. I can't recall the name, but there is one particular lamb dish that's amazing! drool

...you know... there's a right way and a wrong way to photograph food. Cuz if you don't do it right, with the right lighting, developing, etc. it really, really doesn't look good. To put it politely.

I always found Ethiopian restaurants ironic.
Whenever I'm in one, not only am I eating their food,
but also the bowl it came in.
All the while I'm thinking,
"Isn't most their country starving....?"

I just tried some for the first time in San Francisco in February...I didn't think it would be good but it really is!! woot! I've no idea what anything's called (my friend ordered for me lol), but I've been craving that flat, sourdough-tasting bread and these spicy yellow potatoes since then. drool

Ethiopian food is THE BEST!!!!

I LOOOOOVE foods from all over and I really am a "foodie"; you have no idea how much I bow down to you for being able to pull off that meal eek !

I'm still working on learning the inns and out of foods from Nepal, but after that----I'm going for Ethiopian wink !

I love injera nod - My Ethiopian ex-boyfriend 3 years ago used to cook a mean injera, spicy hot food!



Injera is the Ethiopian traditional dish. Accompanied with spiced sauce (wat) cooked with condiments and melted butter cleverly associated, the meat, the fish and the vegetables are tasted morning, midday and evening with a kind of big spongy wafer, the injera.

It's amazing that you cooked all of that! clapping I really love ethiopian food...there are two locations of an Ethiopian restaurant here in Detroit...it's called The Blue Nile...great stuff! I love the cinnamon tea they offer.

Yes -- that's what injera bread is supposed to look like! Mine didn't turn-out as bubbley, so it was more like a thick crepe. It was good, but not the right fluffy consistancy. The pic you posted looks like they made the chicken dish I did and a green lentil mash -- it looks delicious! I'm telling ya people -- if you've not tried it, and live in an area where you can get it, you're gonna LOVE it! The next attempt will be Indonesian food!!! (Maybe next weekend...)
