I love bacon too! Do you like it crispy or a little bit flimsy? Smoked and peppered = YUM!!!!

Anyway, here's a recipe I make for parties. It's easy:

1 package bamboo skewers
1 pound fresh scallops
1/4 pound bacon
2 tablespoons honey
1 tablesoon vinegar
2 tablespoons mustard
2 tablespoons olive oil

Soak skewers in bowl of water. Drain. Wrap 1/2 slice bacon around scallop and place on skewer. In small bowl combine honey, vinegar, mustard and olive oil. Brush onto scallops and bacon. Place on baking pan and broil for 3-4 minutes per side or until crispy.

Enjoy!

I was recently diagnosed with high cholesterol, so I've stopped getting my morning "cheese & bacon on a croissant" breakfast sandwich.

But MAN do I miss it!

I used to buy a croissant noe and then, and the lady would toast it for me and ask if I wanted butter - like there wasn't already a block of butter in it! confused
