I'm about 85% veggie. I don't cook meat at home and generally only eat meat if it's served to me when I am a guest in someone's home or once in a while I crave it and indulge. But that's getting more and more rare for me these days. I prefer to eat veggie.

Me too.... Except on rare occasions I don't eat red.... never have craved pork in the least.... I do like chicken ,turkey and seafood! Most days I go without meat all together...

VEGETARIAN here and believe it is one of the most important choices I've made in my life. It's difficult because I live in rural Michigan, on Lake Huron where hunting, fishing and farming are common and with absolutely NO vegetarian restaurants near. Fortunately there is a nice selection of veggie food in a new superstore about 25 miles from me and for road trip days a great Trader Joes about 2 hours away. Gangsta and I take coolers and load up! I'm working on the vegan part now but am really struggling with it.

Its beautiful up there on Lake Huron. biggrin

bawl i guess i'll have to resort to google then. sad

found the recipe i was looking for!!

guess what i'm havin for lunch! biggrin

Stuffed Artichokes

3 large artichokes
5 ounces parmesan cheese -- grated
1 large clov garlic -- minced
1 cup italian bread crumbs
1/4 cup olive oil -- (this needs to be olive oil -- no substitute)
lemon juice

Preparation:
Cut the stems and the tops (Just low enough to remove the pointy ends of the leaves) off of the artichokes. Mix cheese, garlic, and crumbs. Spread the artichoke leaves so you can fill each layer, from the outside in, with the crumb mixture. Place the artichokes in a pot with about 1-2 inches of water. Drizzle olive oil and lemon juice over the top of each artichoke. Cover and steam 45 minutes or longer, checking occasionally that the water has not completely evaporated. The artichokes are done when a leaf can be easily pulled off.

Reincarnate

I'm a vegetarian but I do eat eggs. I didn't eat fish until this year and I feel terribly guilty about it. I'm trying to avoid being told to eat meat again and am hoping that eating fish once a week will improve my iron count. sigh
