sounds nice thumbs up!

thanks! i like it, and it's a lot of food for not a lot of prep time or a huge list of ingredients. and if you add enough curry powder, it'll clear your sinuses. thumbs up!

on the vegan roux - i'd just replace the milk with unsweetened soy milk and the butter with vegan margarine (i love Earth Balance).

again... drool

thanks!

i've never been sure about how successful soy milk is as a substitute in cooking...i'll try it! and i'll have to look for the vegan margarine. i know it won't be at my local jewel and it's probably not available at trader joe's...i'll have to hunt down a nearby whole foods.

it's great stuff! cold-pressed, no trans fats, and none of that jello-like wiggle a lot of other margarines have. hope you can find it!

You also seem to have different types of Tofu there
(in terms of texture)
I've only seen one type of plain Tofu

well, here in chicago we can get the refrigerated tofu (like nasoya) or we can get the unrefrigerated that come in smaller blocks and are packaged in a foil-lined cardboard container.

i don't like the unrefrigerated kind of tofu - it's slimey to me, and you can't really drain it of extra moisture without smashing it.

i find that the refrigerated variety of extra firm tofu is really versatile, and you can get a heartier, "meat like" consistency with it - you can crumble it up to add texture to chili or you can cube it to give something a chicken-like texture. you can also slice it into long pieces if you want to make a fried tofu appetizer with dipping sauce.

other than sauces and whatnot, i really have no use for soft/"silken" tofu.

where do you live? do you have a chinatown district anywhere nearby? you can usually find grocers with different varieties of FRESH tofu there.

sometimes i take it for granted that we have such a great variety of vegan products here. not only for us vegans, but also for people with food allergies, etc. when i go to germany, i pretty much shelve all expectations of vegan living and go with the flow. but i'm sure there will be more variety over there in the future, too.
