I'm a fairly obsessive person, and a glutton, so I there's very little that I can be trusted with laying around the house. These days, I find I usually eat some sort of canned vegetable (read:single serving) in a nutritional yeast "cheese" sauce. Still trying to figure out a way to give bulk and thickness to the sauce without flour, or something equally carby.

If I had my druthers (or a removable stomach), I could easily subsist on cookie dough, or cake, or vegenaise sammiches for the rest of my life. F@#$. Now I'm hungry.

i have a recipe for a vegan "cheese" sauce you might like:

1 c cooked or canned cannellini or other white beans, drained and rinsed

1 tbsp chopped onion

2 tbsp tahini

1 tbsp mellow white miso paste

1 tbsp nutritional yeast flakes

1/2 c soy or rice milk (unsweetened is best)

1 1/2 tbsp fresh lemon juice

salt

cayenne pepper

place beans, onion, tahini, miso and yeas in food processor and process until smooth. add soy milk and lemon juice, season with salt and cayenne to taste, and process until creamy.

(this is great in lasagne or casseroles)

make a batch - i'd say it'll keep in the fridge for at least a week. enjoy!

sugar
chili
vinegar
noodles



and tea

Not a food, but the amount I consume contributes tangibly to my calorific intake smile

Thanks! I'll have to try it soon. Here's mine:

1/4 cup nutritional yeast

1/4 cup flour

1 cup water

salt to taste

Whisk together yeast, flour, and salt, then add water and mix again. Heat on med. low until sauce thickens, stirring intermittenly.

The salt is absolutely essential: I found out the hard way that n. yeast without salt is downright gross. I have, however, also had excellent results using soy sauce (or Braggs Liquid Aminos). I'm still discovering which spices work well, but I've had good results with chili powder, minced garlic, and dill. I have had not so good results from too much turmeric.
