i thought this was just a jamaican thing
we're about to bake for the holidays (jamaican black cake  ) and year after year, generation after generation...
we STILL don't got no recipe!!! no idea why

It's an old southern thing too.
My Aunt passed away at 102 years old this year and the only one who can make her famous rolls is her daughter, who ain't young herself. No measurements at all. A pinch, a handful, then add milk until it’s moist. I tried to make the recipe, if you can call it that, a half dozen times. The results were inedible. I going to have to spend a lot of holidays with my cousin making rolls or that 200-year-old recipe will go to the grave with her. No More Haters on the Internet. | |

the ingreedents are diffrent. Some squash are less sweet then other. some salts are more salty. some beef is more filling, or packed thighter so it goes a longer way. Learning to cook with soul, requires an understanding of what the soul needs and how it interacts with the substances you think of as food. The main ingredient is love after all. That love is seen by the amouth of time you are willing to put into the dish to make it perfect.

I DO KNOW what you mean..... I followed my X's Nana in the kitchen while she did the peach cobbler.....
She thought I was nuts but that woman really loved me so she just gave a deep laugh with every move I made and dealt with it... She would dip her hand into say the flour and I would scream STOP! Put it here first... and I would write it down... pinch of this dab of that... all measured by me and written..... Now I can do it too without looking..... (Or could...been a few years) | |

I just saw the name of this thread and started cracking up, half of the reason is because I'm drunk but the other half is because my Grandma doesn't use measuring cups and her food taste like it was sent from heaven, and my uncle does use measuring cups and he is a professional cook but his food taste like shit with water added...
