Torani Cranberry-Orange Muffins
Makes 1 dozen.
1/2 cup Torani Mandarin Orange syrup
1/2 cup dried cranberries
1-1/2 cups flour
1-1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
8 Tbsp. butter, melted
1 egg, lightly beaten
1 tsp. grated orange zest
1/2 cup buttermilk

For the crumb topping:
1/4 tsp. salt
1/4 cup brown sugar
1/2 cup all-purpose flour
4 Tbsp. butter

Combine all ingredients in a small bowl and mix well. In a small saucepan, heat syrup and cranberries on low heat for 15 minutes. Remove from heat and let stand. Meanwhile, preheat oven to 350 F and prepare crumb topping. Sift together flour, baking powder, baking soda, and salt into a mixing bowl and make a well in the center. Combine the cranberry mixture with the butter, egg, zest, and buttermilk. Pour the liquid mixture into the well of dry ingredients and stir just until combined. Spoon into greased muffin tins and distribute crumb topping evenly over muffin batter. Bake for 20 minutes, or until a toothpick stuck in the center comes out clean.
Makes 1 dozen.
