THANKSGIVING RECIPES/

I'm looking for some of your favorite THANKSGIVING/HOLIDAY RECIPES>



I'm particularly interested in Sweet Potatoe Caserole. ANyone have any?

BEST sweet potato recipe EVER!

SWEET POTATO, WHITE BEAN AND PEPPER TIAN

3 medium-large sweet potatoes, peeled, quartered lenghtwise and sliced 1/4" thick
2 cans of small white beans
1 red and 1 green bell pepper, each cut into 1" chunks
1 medium red onion, cut into 2" chunks and separated
2 plum tomatoes, cut into 1 1/2" chunks
5 garlic cloves, sliced
1/2 tsp salt
ground black pepper
1/3 c olive oil

topping:
6 slices of rye bread (any bread will work, but i like rye the best)
1/4 c olive oil
garlic powder
salt
oregano

preheat oven to 375 degrees F

combine all veggies, garlic, salt, pepper and oil in a large bowl and toss well. pack mix into two shallow baking dishes and flatten the top surface. bake 45 minutes

tear up the bread into 1/2" pieces and mix with the oil, garlic powder, salt and oregano

remove from the oven. spread the bread mixture all over the top, return to the oven and bake another 15 minutes, or until golden brown on top. let it for 10 minutes before serving.

drool now i'm hungry...

Sounds good, except for the tomatoes. I thonk I might try that recipe- Thanks!! I am always looking for new recipes for sweet potatoes. I do not like sweet potato casserole- Yuck!!!!

it should be fine w/o the tomatoes. it really doesn't sound like much, but all the flavors come together beautifully. whatever you do, DON'T leave out the garlic, though! let me know what you think!

yeah, this has been done before...I have part of the recipes saved to word.....
