GET YO ASS IN THE KITCHEN... Banana Bread!!!

Drew's has some family coming this weekend to visit and I'm going to make a banana bread using Splenda (great stuff) instead of sugar.

1 stick butter, plus some for greasing pan.
1 1/2 cups all purp flour
1/2 cups whole wheat flour
1 tea salt
1 1/2 tea baking pwdr
3/4 cups sugar (or substitute with Splenda, 1 cup sugar = 1/2 Splenda)
2 eggs
3 ripe, mushed bananas
1 tea vanilla
1/4 cups walnuts
1/4 cups pecans
1/2 cups dried, unsweetened coconut

1. Preheat 350 degrees, 9X5 loaf pan (hint- line bottom with parchment paper), bake 45 mins to 1 hour.

2. Mix dry, cream butter and beat in eggs and banana. Stir into dry ingredients (don't mix more than necessary). Gently stir in vanilla, nuts, and coconut.

3. Pour into pan, bake until toothpick comes out fairly clean. Cool 15 mins, remove from pan. Wrap in waxed paper.

Let me know how the Splenda thing works. I am not too trusting of that stuff.

BTW my partner doesn't cook...but he makes a wonderful Banana Bread.

Drew and I have switched to a diabetic diet. Splenda is wonderful! I've been using it in coffee and iced tea and you can't tell the difference from sugar. It doesn't have that non-sugar after taste like the others.

I don't like to cook either! I'd rather go out. But I can bake!

I'm using my domed cake stand, but you can wrap it in wax paper to keep it fresh.

ooh, i have some trader joe's banana bread mix that i've been putting off making...i'm sure it can't be anywhere near as good as your recipe from scratch, but it's pretty dang good. nod

and i'm sure your presentation will be top notch - you're brilliant at making stuff look nice.

Chocolate Cupcakes



Makes: 18 cupcakes
Preparation Time: 15 minutes

1/2 cup Nestle® TOLL HOUSE® Baking Cocoa
1/2 cup boiling water
1 1/2 cups sifted cake flour
1 cup SPLENDA® Sugar Blend for Baking
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup butter
2 large eggs, lightly beaten
1/4 cup milk
1 teaspoon vanilla extract


1. PREHEAT oven to 350°F.
2. COMBINE cocoa and boiling water, whisking until blended. Set aside.
3. COMBINE flour, SPLENDA® Sugar Blend for Baking, baking soda, and salt in a large mixing bowl. Cut butter into flour mixture with a fork or a pastry blender until crumbly. (This procedure may be done with a mixer at the lowest speed. Cover mixing bowl with a clean tea towel to prevent spattering).
4. COMBINE eggs, milk, cocoa mixture and vanilla in a small mixing bowl; add 1/3 of the egg mixture to flour mixture. Beat at low speed of an electric mixer until blended. Beat at medium speed for 30 seconds or until batter is smooth, stopping to scrape down sides of the bowl. Repeat procedure 2 times.
5. SPOON batter into paper lined muffin tins.
6. BAKE 22 minutes or until a toothpick inserted in center comes out clean. Remove from pan; cool completely on a wire rack. Dust with powdered sugar or frost with Rich Chocolate Frosting.
