Carrot Cake Recipe?

Anyone have a good recipe for Carrot Cake? It's my mother's favorite and I'd like to make one for her birthday Sunday. I've found many on the net but would like to try one that someone has had experience with.

Bare with me.
We will make this happen.
The recipe I will find for you is Amish...their baking is the best.
It calls for crushed pineapple. It is to die for.

Amish Carrot Cake

1 tsp baking soda
1 cup sugar
1 cup brown sugar
2 tsp cinnamon
2 ¼ cup flour
2 tsp baking powder
1 tsp salt
5 eggs (yes, 5)
1 cup crushed pineapple
2 cup grated carrots
2 tsp vanilla
1 ½ cup oil
½ cup nuts

Beat oil and sugar.
Add eggs, one at a time.
Beat well.

Add dry ingredients. Mix well.
Add vanilla, carrots, pineapple and nuts.
Bake at 350 for 50 minutes.

Frosting:
8 oz cream cheese
½ cup softened butter
1 tsp vanilla
1 lb powdered sugar

Beat until smooth

I mostly do Chocolate on Chocolate- Drew's bday one year:


Remember this pic? Drew finished this gown one year on his birthday....

Right mate, if you're feelin' a little adventurous (and you're not heavily diabetic confused ), I've got a recipe for 'Indian' carrot (sort of) cake for you biggrin Well, it's more of a sweet, actually wink





Ingredients :-

* 4 cups whole milk

* 2 pounds finely grated carrots

* 1/4 teaspoon ground cardamom

* 1 cup sugar

* 1/2 cup sweet butter or ghee (available in Indian and specialty markets)

* 1/2 cup raisins

* 1/2 cup pistachio nuts

* 12 whole almonds for garnish

* Vanilla ice cream for serving

(Serves approx. 4 ~ 6 [depending on how greedy you are wink ] )

Method:-

In a heavy pan, bring milk to a boil over medium heat, stirring with a wooden spoon. Reduce heat to low, add carrots and cardamom and cook, stirring frequently, for one hour or until the milk is almost evaporated.

Add sugar, stir and cook until it is completely dissolved. Add butter or ghee, stir and cook for about ten minutes, or until carrots are tender and thoroughly coated. Add silvered almonds, raisins and pistachios, and cook for ten minutes. Remove from heat, transfer to individual serving dishes, and garnish with whole almonds and vanilla ice cream.

The garnish is obviously optional but the hot and cold contrast with the plain ice cream is nice smile


N.B. Be warned, this dish (although quite simple) is a little adruous in preparation and does turn out very sweet. However the rewards out weigh the efforts nod It's exquisite! Give it a whirl if you can spare the time

Forgot to mention the name of the dish, it's called Gajar Halwa thumbs up! ("Gajar" being 'carrot' wink )

Aye, you could get away with calling it Kheer, it just means "pudding" thumbs up!

Depending on the region it's served in, it can go by a couple of different names smile "Halwa" is the most popular synonym for this sweet wink
