Kahlua Bowl Cake
INGREDIENTS: 1 chocolate cake, 13 x 9-inches, cooled, cut in cubes 1/2 cup Kahlua 1 package chocolate instant pudding, prepared 12 ounces Cool Whip 1 chocolate toffee candy bar (Skor) PREPARATION: Assemble in a 2-quart bowl: Put half of the cake cubes in the bottom of the bowl then pour half of the Kahlua over the cake. Spread half of the pudding over the cake and Kahlua then spread half of the Cool Whip over the pudding. Repeat layers then break the Skor bar up and sprinkle pieces over the top. | |

Red Velvet Cake
INGREDIENTS: 1/2 cup shortening 1 1/2 cups sugar 2 eggs 2 tablespoons cocoa 1 1/2 oz red food coloring 1 teaspoon salt 2 1/2 cups flour 1 teaspoon vanilla 1 cup buttermilk 1 teaspoon soda 1 tablespoons vinegar PREPARATION: Cream shortening; beat in sugar gradually. Add eggs, one at a time; beat well after each addition. Make paste of cocoa and food coloring; add to creamed mixture. Add salt, flour and vanilla alternately with buttermilk, beating well after each addition. Sprinkle soda over vinegar; pour vinegar over batter. Stir until thoroughly mixed. Bake in 3 8-inch pans or 2 9-inch pans for 30 minutes at 350°. | |

Vienna Apple Cake
1 egg yolk 2 tbsp. cold water Dash of salt Juice of 1/2 lemon 1/2 cup butter 1 cup sifted flour 1 tsp. Baking Powder 3 large apples 1/4 cup raisins 1/3 cup almonds 1 egg beaten 1 tsp. Lemon extract Beat together egg yolk, water, salt and lemon juice. Cream butter, blend into first mixture, add flour. Divide dough in half. Roll one piece out thin and fit into greased pan, 12 x6 inches. Peel and core apples and chop fine with raisins and almonds. Spread mixture over dough in pan, top with remaining dough rolled out thin. Brush with beaten egg. Bake in 400 degree over about 45 minutes. | |

Mississippi Mud Cake
4 eggs 2 cups sugar 1 cup butter or margarine, melted 1 1/2 cups flour 1/3 cup unsweetened cocoa powder 1 tsp. vanilla extract 1 cup flaked coconut 1/2 cup chopped pecans 1 7-ounce jar marshmallow creme Levee Frosting (recipe follows) 1 cup chopped nuts, if desired Grease and flour a 13-by-9-inch baking pan; set aside. Preheat oven to 350 degrees. In a large mixer bowl, beat eggs until thick. Gradually beat in sugar. Combine melted butter or margarine with flour, cocoa, vanilla, coconut and pecans. Add to egg-sugar mixture. Stir well with a spoon. Pour into prepared pan. Bake 30 minutes or until done. Remove from oven and immediately spread marshmallow creme gently on surface of cake. Prepare Levee Frosting. Spread frosting gently over warm marshmallow creme, swirling to give a marbled effect. Sprinkle nuts over top, if desired. Levee Frosting 1/2 cup butter or margarine, melted 1/3 cup unsweetened cocoa powder 1 tsp. vanilla extract 6 tbsp. milk 1 1-pound box powdered sugar (4 cups) Blend butter, cocoa powder, vanilla, milk and powdered sugar together in a medium bowl. | |

Puffed Wheat Cake Ingredients: • 1/3 cup butter or margarine • 1/3 cup corn syrup • 1/2 cup brown sugar • 1 1/2 tablespoons cocoa • 6 cups puffed wheat Directions: 1. Combine butter, syrup, sugar and cocoa in a saucepan. 2. Bring to a boil while stirring over medium heat. 3. Measure 6 cups of puffed wheat into a large bowl. 4. Pour mixture over puffed wheat and stir until all puffed wheat is coated. 5. Press into an 8x8 inch greased pan and let stand to cool. except i like it without the cocoa and use 8 cups instead of 6... sauce is also nice over popcorn!) | |

Oregon Filbert Carrot Cake 1/2 cup butter 1 cup sugar 2 eggs, beaten 1 1/2 cups flour 2 tsp. baking powder 1/2 tsp. salt 1/2 tsp. Lemon Rind, grated 1/2 tsp. cinnamon mixed with dash of nutmeg and allspice 1 cup grated zucchini 1 cup grated carrots 1 cup chopped Oregon Filberts Preheat oven to 375 degrees. Cream butter and sugar together, add eggs, lemon rind, spices and grated zucchini and carrots. Beat well. Fold in 1/2 cup of the filberts. Sift flour, baking powder and salt together. Add to cream mixture, mix well. Pour batter into a greased 8-inch square baking pan. Sprinkle rest of filberts on top. Bake 1 hour or until pick in center comes out dry. Delicious served with whipped cream season with lemon extract, or a scoop of maplenut Ice-cream. | |

1 (about 18 1/4-ounce) pkg. chocolate cake mix 1 8-ounce pkg. cream cheese, softened 2 tbsp. margarine or butter, softened 1 tbsp. cornstarch 1 14-ounce can sweetened condensed milk (not evaporated milk) 1 egg 1 tsp. vanilla extract Preheat oven to 350 degrees. Prepare cake mix as package directs. Pour batter into well-greased and floured 10-inch bundt pan. In small mixer bowl, beat cheese, margarine and cornstarch until fluffy. Gradually beat in sweetened condensed milk then egg and vanilla until smooth. Pour evenly over cake batter. Bake 50 to 55 minutes or until wooden pick inserted near center comes out clean. Cool 10 minutes. Remove from pan. Cool thoroughly. Glaze or sprinkle with powdered sugar when cool. Store covered in refrigerator. | |
