When I allow myself to eat them, I make the most amazing inside out bacon cheeseburgers.

Portobello Mushroom Burger (grilled/sauted) with swiss cheese, red onion, lettuce, tomato... and some mayo. Although the Mushroom is usually moist enough that mayo really is not needed for a delicious taste.
Regular Mushrooms are good as well (sauted over an open flame)... but not quite as tasty as portobello mushrooms... Make sure the buns or bread used are gourmet and fresh. Mmm... [Edited 3/31/05 18:00pm]

For fun I like to go to the 7eleven near the market and get a 19 baht mystery meat burger. Alternatively there's the 29 baht mystery meat burger which is like the 19 baht one but a little darker and slightly spicy. There's the added bonus of optional communal fillings - dried cucumber, squashed tomato slices, rare 'brown lettuce', squeezy mustard or ketchup.

Also, anyone who knows NZ here, and in particular Auckland? How about the 'White Lady' food van on Shortland St. and corner of Queen St.
Damn, surely THE best late night burger van in the world. You can have a bun or toasted bread, but it's basically a huge steak you get rather than a burger. I found this on the net: One last menu item deserves a little explanation: the "Aucklander 3AM White Lady Special." Most Aucklanders know the White Lady, a catering trailer that pulls up outside bars late at night and serves burgers to hungry drunks. Hungry drunks apparently like burgers with pickled beets (a Kiwi staple), a fried egg, a pineapple ring, ham, cheddar, tomatoes, grilled onions, and garlic. No word on whether sober Aucklanders like them, too. Can't remember having beetroot or anything like that in my burger to be honest, just onions, garlic, tomatoes and the meat. Highly recommended if you find yourself in Auckland though. ... [Edited 3/31/05 18:14pm]
