Anxy's Yummy Sinus Clearing Recipe of the Day: Spicy Curry Roux Stuff With Rice! This is one of my favorite recipes and I just rediscovered it this weekend when my boyfriend filled me in on how to make a really good roux. Try it - you'll like it!
You'll need: 1 Pkg Extra-Firm Tofu 6 Tablespoons Flour 6 Tablespoons Butter 3 Cups Milk Some wok oil/sesame oil Curry powder to taste (I used 3 tablespoons and it was a bit intense...but I like it like that) Ground pepper to taste Salt to taste 1 Cup Rice (I like basmati, but whatever ya got is fine) This is easy: Cut the tofu into little cubes and sautee the cubes in sesame/wok oil over medium heat. While you're sauteeing, you can grind some pepper over it if you want a little added kick. THEN, while the tofu is getting nice and brown, melt the butter on medium-low heat and mix in the flour, and mix that stuff till it gets nice and light brown. THEN, slowly mix in the milk (ya might wanna warm the milk up a bit in the microwave) and then turn up the heat until the mixture gets thick (you made roux!) and then stir in your curry powder. By now, your tofu should be nice and crunchy brown. Dunk that stuff right on into the curry roux stuff, and stir it in. Once everything is all nice and combined and mixed together, take it off the heat and let it sit for a while. Then get your rice ready. When the rice is done, dump some of that there curry stuff over your rice and get nice and full and let the curry powder clear out your sinuses, WOO BOY!!! | |
