Soup anybody?

OK, what's your specialty soup?
I'm not a great cook. Basically, I don't cook at all redface
But I do like to just put things together that I think will taste good and it usually comes out good biggrin

I've just made a simple chicken soup from potatoes, carrots, tabasco, paprika, black ground pepper, salt, olive oil, and some chicken soup flavoring thingie (need to improve my vocabulary before I move to NY).

Tastes great!!! thumbs up!

i love lentil soup, especially with some hot sauce added at the end... drool

we also make a thai curry soup with coconut milk that's awesome.

at the sushi restaurant, nothing beats a nice bowl of miso soup with lots of seaweed and tofu! thumbs up!

It's a root vegetable with white flesh - nice roasted.

I never thought I'd be swapping recipes on the org biggrin ... they're my own, so I don't know whether they'll make sense, but here goes:

Carrot and Parsnip:

1 onion
2-3 parsnips
4 carrots
fresh vegetable stock (or Marigold Swiss Vegetable Bouillon powder - approx 3 teaspoons per pint of liquid; 4 if you want a stronger taste)
Sunflower oil (approx 2tbs)
(optional, for thicker soup: quick-cook lentils/pulses - in Britain, Holland and Barratt do a great pack ... you don't need to boil them first and can add them straight to the soup)

Heat oil and add chopped onion.
Add carrots then parsnips.
Stir and sweat the vegetables for around 5 minutes.
Add the stock, made up to around 2 pints
Add quick-cook lentils
Cook for around 20 mins

Either leave it chunky or whizz up in a food processor ... it will thicken considerably, so I usually do half and half (half big chunks, half whizzed up).

Cauliflower Soup
Possibly the easiest soup ever ... and it comes out creamy - people usually think it's got cream or butter in it.

1 onion
1 cauliflower
Vegetable stock as above
Sunflower oil

Heat oil and add onion.
Break up cauliflower and add
Stir and sweat together for a few minutes (around 4 or 5)
Add stock
Heat for around 20 mins
Take off heat and whizz it all up.
Done

I don't have a private jet, but eating lots of hummus will make you have your own jet, if the ingredients are right thumbs up!
