My choice would be 'What Child Is This?" by the Vince Guaraldi Trio. It captures the joy and melancholy of the holiday, from both a spiritual and cultural standpoint. Others would be "What Christmas Means to Me," and Donny Hathaway's classic. I also like Vanessa Williams' cover of "What Child Is This?"
