Change the settings... If that doesn't work then check if the manufacturers have website and see if they have firmware upgrades...

I bought the Canadian disc, and I've tried to play it on a multi-region DVD player here in the UK (on a PAL TV). Problem is the picture keeps flashing from black and white to colour, although the sound is fine.

It's probably just a setting that I need to change, but I haven't had the time to play around with it and sort it out, or find the instructions for the DVD/TV. I thought you could just stick it in the machine and, hey presto, it'd all work.

Anyone familiar with this stuff? Got any suggestions? Help would be much appreciated.....

Yeah, I get this with my Sony DVD player. What I have to do when playing NTSC discs is change the video output in the setup menu from RGB (which works for UK DVDs) to S-Video.
