Disney Inspired Dinner

Here's the before pic of my ratatouille. What's on your platter tonight?

I mean this looks like what I put on top of my roast just before I pop it into the oven. Very pretty though.

Well, it's not. Ratatouille is a baked vegetable dish. And this is the before pic. You put some tomato paste in the bottom of the pan, with garlic, onion, herbs, then stack the vegetables, drizzle with olive oil, salt, pepper, & herbs. Cover with parchment and bake it off. You serve it as an appetizer, a side dish, or a main dish. And it's not even vegan, because I used beef broth w/ the tomato paste. (The original recipes often call just for water). We ate it with pasta. It can be served with cous cous, pasta, or rice, too.

LOL Bruh, you need to wipe the boogers out of your eyes. There is no egg on it whatsoever. It's all vegetables. Period. That yellow thing in the middle is the bottom of a yellow bell pepper.

Y'all act like you never eat vegetables. That's all this is, and the 'after' shot looks much like the first. The vegetables get tender but firm. Ratatouille used to be a coarse stew, but cooking methods have changed over the years. It's almost like a deconstructed vegetable soup. We dolloped some mascarpone cheese on top.

Oddly, the smell in the house did remind me of pizza, with the garlic, thyme, and tomato.

Just to be clear, the vegetables are: two different aubergine, yellow squash, zucchini squash, tomato, onion, red pepper and yellow pepper - all thinly sliced and stacked together on the tomato paste mixture.

AND NO RAW EGGS. hehehehe

This looks like a work of art! I currently have all these vegetables in my fridge so I might try this tomorrow. Did you take an 'after' photo too?

I eat vegetables but never had ratatouille, then again some things I'm not partial to like bell peppers of any color, and cooked tomatoes. But they are always beautiful and add so much flavor to other things.

Looks gorg! Did you google a recipe? I don't see the sauce on the bottom, but I can't tell in the pic. Ours is finally eaten up. And oddly I'm just now finishing up editing the show I filmed with the dish, to upload & queue it on YouTube. It airs in May.

Thanks! Mine is just a 'roasted' adaptation of yours based on your photo. I added some crushed garlic on top and put it in the oven for just under an hour. So it isn't really a ratatouille and no sauce, tough there were some really nice juice at the bottom after cooking it. I look forward to seeing your recipe in action, are you a chef?

I'm not a chef. I just really love to cook and bake. I needed a new creative outlet, and I thought - why not do a cooking show?! There's a bit of a nod to Ina Garten in my shows, and a few other gals on Food Network. If anything, doing the show has pushed me to try things I might not have attempted before.

And with your dish, I would have drizzled some olive oil on it, then some bread crumbs (Panko), and shredded Parmesan, baked it off like a vegetable gratin. YUM. But you can't go wrong with roasted veggies.

Your ratatouille is different from mine, which comes from The Moosewood Cookbook. It was a family favorite for years.

Moosewood Cookbook's Ratatouille
Ingredients
  1. ½ cup extra virgin olive oil
  2. 4 cloves of garlic, minced
  3. 2 medium sweet onions, chopped
  4. 2 medium purple eggplant, cubed
  5. 1 large zucchini or 2 medium zucchini, cubed
  6. 1 bell pepper
  7. 1.5 quarts (about 6 cups) of grape or roma tomatoes, cut in half
  8. 2 tsp balsamic vinegar
  9. 1 tbsp dried thyme
  10. 2 tsp sweet Hungarian paprika
  11. pinch of chili flake to taste
  12. ¾ tsp sea salt
  13. freshly ground pepper
Instructions
  1. Heat olive oil over medium heat in a large pot until warm and add onions and garlic. Cook for 5-10 minutes until softened.
  2. Add cubed eggplant, thyme, salt, chili flake and paprika. Cook until eggplant is ½ it’s original volume –about 12 minutes.
  3. Add tomatoes, zucchini, bell pepper and balsamic vinegar. Stir to combine everything.
  4. Cook everything together, stirring occasionally for 25 minutes.
  5. Serve warm, room temperature or cold.

I did drizzle some olive oil and will definitely try with the bread crumbs and parmesan next time, it sounds delicious just reading those words! Do you mind sharing the name of your cooking channel on youtube?
