So...... If I posted a thread asking if a meat diet is fattening...what would you reply?

A vegetarian diet is like any other diet, if you don't want it to be fattening you need to make sure it is balanced. I will always advocate the diet because I just don't see the need to kill innocents for pleasure but health wise, if you eat a balanced vegetarian diet then you'll feel fantastic; if you have cheese and chips every night then you'll put on weight.

If you're asking about pre-packed vegetarian meals then again, I'd say it applies the same as meat. It's all about proportion. Just don't overdo it.

I don't feel like I've helped much. Sorry. All I can say is, if you do decide to turn veggie, and eat a balanced diet, you'll feel great for doing it smile

A lot of the premade frozen products are fattening. Just stay away from the items with a million ingredients.

99.9% of everything I say is strictly for my own entertainment

In a more generalized statement, a lot of vegan or vegetarian foods are just full of crap. We have a co-op here that carries more organic and natural stuff, vegan or not, so you know it's a bit better for you. However, some stuff, while void of animal product, has a lot of extra stuff to compensate.

I found being a pescetarian years ago (I was vegetarian and vegan later on) was a good balance. A bit of fish here or there, and cut out all poultry, beef, and pork. Just that alone, without exercise or anything else, I lost weight in just a few short months. My pants were baggy on me, etc. I also am not a big soda drinker and stick mostly to water, and the occasional iced tea.

I have a recipe to make vegan mac and cheese (or vegetarian depending on a couple of ingredients) that would make you question whether it was real cheese or not. I've fooled every person I've ever served it to. And no, it doesn't use that shitty vegan cheese out there.

In general, if you want to eat a bit better, cut out a lot of animal product, and go plant based. It can't hurt you. Google around - there are tons of recipes and ideas you can easily do at home, and assure yourself you're eating not-crappy-vegan products.

So....come on , spill the beans..what do you use instead of vegan cheese?

How do you make your vegan mac and cheese?

Do you use almond flakes as a cheese substitute (like parmesan flakes)?

There isn´t really a good cheese substitute that tastes like cheese or has that same texture.

What do you use?

There are certainly a lot of bad vegan cheeses out there, but I've had really good vegan mac n cheese from time to time and the secret is usually in pureed cashews and nutritional yeast.

I don't think it actually "fools" anybody, but it's tasty.

And the longer you're veggie the more you forget what the real thing actually tastes like. And frankly, it doesn't matter anymore. You still get all the right elements, the creaminess, the umami, etc.

I still haven't given up eggs or dairy myself

Nutritional yeast. I've done the soaked & pureed cashews for making herb cheese balls, etc.

With a good recipe, that yeast makes for a great mac n' cheese.

Yaaaas! I do that. Spray & toss with some olive oil first. Then some nutritional yeast, and a bit of Tapatio. We got ourselves a SNACK.
